Homemade Fresh Fruit Popsicles

POPSICLES! We love POPSICLES!! The most beautiful, fruity, summery popsicles you will EVER make! There isn’t much to them. You’ll need lemonade (homemade or store-bought), strawberries (oven-roasted are highly recommended), kiwi, blueberries, and any other favorite summer fruit that makes you happy. They’re super easy to make. Kids love them, guests love them, and YOU will love them. Especially when the summer heat really turns up.

Popsicle Molds

Popsicle molds are not what they used to be – they’re better! You’ll find them in all shapes and sizes, made of flexible silicone or even stainless steel! I make these fruit popsicles with this Norpro popsicle mold (this popsicle mold requires popsicle sticks).

How to Make Homemade Fruit Popsicles

  1. Pick your liquid – For this recipe, I made my own homemade lemonade since I can adjust it to have less added sugar and no high fructose corn syrup. Feel free to use whatever fruit juice you have available.
  2. Prepare the fruit – If you have the time, try roasting some strawberries. If not, slice your favorite fruit into small slices and pieces so that they are small enough to fit in the popsicle mold easily.
  3. Assemble the popsicles – Add the fruit and lemonade in layers.
  4. Freeze – Transfer to the freezer and freeze for at least 4-8 hours. Once completely frozen, run the popsicle mold under warm water for approximately 10 seconds. The popsicles should slide right out!

Popsicle Modifications and Additions

  • Swap the lemonade for another favorite summertime beverage like apple juice, orange juice, sweet tea, or coconut water.
  • Rather than adding chunks of fresh fruit, puree the fruit in a blender and add it in layers with lemonade or other types of fruit juice.
  • Add creaminess to your ice pops by mixing pureed fruit with a little Greek yogurt, dairy-free canned coconut cream, or coconut milk.
  • Try other fabulous kinds of fruit like raspberries, blackberries, mango, watermelon, and passion fruit.

Ingredients

FOR THE LEMONADE

  • ¾ cup granulated sugar
  • 1 cup water
  • 1 cup fresh lemon juice
  • 4-6 cup cold water, to dilute

FOR THE ROASTED STRAWBERRIES

  • 1 pound fresh strawberries, stems removed and halved
  • 2 tablespoon granulated sugar

OTHER – Fresh Fruit

  • kiwi, peeled and sliced
  • blueberries
  • peaches, thinly sliced
  • nectarines, thinly sliced

Instructions

FOR THE LEMONADE

  • in a small saucepan bring the sugar and 1 cup of water to a low boil. Reduce to a simmer and cook, stirring constantly, until the sugar dissolves completely. Remove from heat. Carefully transfer the prepared simple syrup and freshly squeezed lemon juice to a large pitcher. Dilute with water until the desired sweetness is reached (I prefer my lemonade less sweet, so I added extra water). Start with 4 cups and move up from there.

FOR THE ROASTED STRAWBERRIES

  • Preheat the oven to 350 degrees F. Line a large baking sheet with parchment paper. Transfer the sliced strawberries to a lined baking sheet and toss with sugar. Roast for 25-30 minutes.
  • While the strawberries are roasting prepare additional fresh fruits to go in your popsicles. In these popsicles, I put in blueberries and kiwi, but feel free to include your favorites. Make it super fun for the kiddos by cutting out star or flower shapes.

PREPARE THE POPSICLES

  • I build my popsicles in layers. Fill each popsicle mold 1/3 way with lemonade and drop in a few fruit pieces. Continue by filling each popsicle mold 1/3 way more and add more fruit. Finally, finish by filling each mold with lemonade. Freeze for at least 4-8 hours (I waited until the next day).
  • For easy removal, run the popsicle mold under warm water for approximately 10 seconds. The popsicles should slide right out!

Notes

  • I used this Popsicle Mold.
  • Roasting the strawberries is optional, but recommended if you have the time.

    Hi,

Looking forward to making these. One question, why do you roast the strawberries? Curious the reasoning behind it?

    1. Jessica Randhawa says:

Roasting strawberries for your lemonade fruit popsicles is a fantastic step that enhances the flavor of the fruit. When strawberries are roasted, the heat caramelizes their natural sugars, deepening their sweetness and intensifying their flavor. This process also helps to release some of the juices, creating a richer, more concentrated strawberry taste that blends beautifully with the lemonade. The roasted strawberries will give your popsicles a more robust fruit flavor and a lovely, smooth texture thatโ€™s a delight in every bite. Itโ€™s a simple technique that makes a big difference in the final taste of your popsicles!
