Oven Roasted Green Beans with Parmesan

I’m one of those people who really loves green beans (even the canned mushy kind). I enjoy them raw, sauteed, cooked in a creamy casserole, and, of course, roasted. This easy oven roasted green bean recipe is one of my very favorites as it is the perfect balance of savory with just a hint of sweet from the candied almonds.

I often prepare a big tray of these roasted green beans and serve them with chicken breasts, store-bought rotisserie chicken, salmon, or quick pan-seared steak.

Ingredients in Roasted Green Beans

The ingredients needed to make this roasted green bean recipe include,

  • Green beans – this recipe is best with fresh green beans. Canned green beans are too soft for roasting. 
  • Olive oil – You’ll need approximately 1-2 tablespoons of olive oil to coat the green beans and help the seasoning stick as they roast. Feel free to add melted butter if preferred.
  • Garlic – Fresh garlic is best as it adds the most flavor. You can add minced or grated, it’s completely up to you. I prefer finely grated garlic and use this handy tool which makes mincing a snap.
  • Italian seasoning – The only seasoning you’ll need for fantastic roasted green beans is Italian seasoning, salt, and pepper.
  • Candied almonds – I love LOVE candied almonds with this recipe. They add the perfect balance of sweet to the salty. If you prefer to add roasted and lightly salted almonds those would also taste fantastic.
  • Parmesan cheese – A little sprinkle of freshly grated parmesan cheese after the green beans have been roasted is all you need. I prefer not to add a ton of cheese, but just enough to complement every other flavor.

How to make roasted green beans

To make this easy and delicious roasted green bean recipe you’ll need a baking sheet, parchment paper, mixing bowl, and oven. Plan approximately 25 minutes start to finish, keeping in mind, however, that everyone prepares ingredients at different speeds, so it may take you a little more, or a little less time.

  1. Preheat oven to 400 degrees F and line a large baking sheet with parchment paper or aluminum foil. Set aside.
  2. Add the trimmed green beans to a large mixing bowl and drizzle with 2 tablespoons of olive oil. Add the minced garlic, Italian seasoning, and a pinch of salt and pepper to the bowl. Mix well to combine and evenly coat the green beans.
  3. Spread the green beans onto the parchment-lined baking sheet and roast for approximately 10-15 minutes, gently shaking the pan once halfway through cooking.
  4. Remove the baking sheet from the oven and immediately sprinkle with grated parmesan cheese and candied sliced almonds. Gently toss to combine.

Tips and tricks

  • Any type of nut or seed will taste fantastic with these green beans. If you prefer not to add candied almonds, lightly salted almonds will also work.
  • Be sure to dry your green beans really well before tossing with garlic and olive oil as the extra water will steam your beans rather than roast them.
  • Cooking at a slightly higher oven temperature (in this case 400 degrees F) will allow your beans to crisp up before turning soggy.
  • For extry crispy green beans, pop your baking sheet back in the oven for 2 minutes or so after you’ve added the cheese and almonds.
  • You can also try using this recipe with asparagus, sugar snap peas, or even edamame.

What to serve with roasted green beans

Fortunately, you can serve green beans with just about anything.

A few of my favorite ways to dish them up are with Garlic Butter Steak BitesInstant Pot Pork Tenderloin, or juicy Baked Chicken Breasts. Any kind of protein (including fish!) goes great with these roasted greens. 

You can also serve them tossed in spaghetti noodles with bacon and a little olive oil for an easy pasta dinner. Serve them at the holidays with Slow Cooker HamSpinach and Pear Salad, and Garlic Roasted Potatoes.

Or, enjoy them right out of the oven for a healthy and delicious snack!

How long to roast green beans

The overall cooking time for oven-roasted green beans varies based on how “done” you like your green beans. Do you prefer them slightly charred and completely soft? Or slightly undercooked?

In general, I prefer my green beans soft and charred. To achieve this, cook your green beans at 400 degrees F for approximately 15 minutes. For extra charred green beans, set oven to broil and broil for 1-2 minutes. For green beans that are slightly undercooked, check their doneness after 7 minutes or so.
