It’s super easy, extra nutritious, and so much fun to customize with your own favorite fruit and nut toppings.

The combination of green matcha powder and chia seeds with the bright, zesty freshness of oranges, mangoes, and Kiwi fruit is a simply irresistible fusion of colors, textures, and flavors. Instead of sweetening the pudding recipe with sugar or maple syrup, for a healthier twist, I blend pitted dates into the almond milk. As far as my favorite toppings, I’m a big fan of toasted pistachios and raw sunflower seeds, but you can add crunchy almond slivers or walnut pieces too. However you make this recipe your own, the perfect healthy snack awaits. 

What is Matcha Powder?

Originating in Japan, Matcha powder is a type of powdered green tea. It’s unique because unlike most tea, which is brewed and then the leaves discarded, matcha is made from finely ground powdered tea leaves that are fully consumed.

How to Make Matcha Chia Pudding

Begin by adding your milk of choice, the dates, and vanilla extract to a blender. Process until the dates are completely blended, and the mixture is smooth. 

In a large mason jar, combine the matcha powder and chia seeds using a butter knife, ensuring they are evenly mixed before carefully adding the blended milk mixture into the Mason jar. Stir well to incorporate the chia seeds and matcha powder fully.

Seal the jar with a lid and refrigerate for at least 4 hours or overnight, allowing the pudding to thicken and set. 

When ready to serve, top the thickened mixture with your favorite fruits, nuts, and seeds. Enjoy!

Ingredients 

  • 1.5 cups milk, I used almond milk, but any milk will work
  • 3 pitted dates, or sweetener of choice
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon matcha powder
  • cup chia seeds

TOPPINGS:

  • 1 Oranges
  • 1 Mango
  • 1 Kiwi
  • Shredded coconut
  • Mixed nuts + seeds

Instructions 

  • Add the milk, dates and vanilla extract to the bowl of a blender and process until dates are completely blended.
  • Add the matcha powder and chia seeds to a large mason jar and mix together with a butter knife.
  • Carefully pour the blended milk mixture into the mason jar and stir well to combine with the chia seeds and matcha powder.
  • Cover jar with a lid and allow it to thicken in the refrigerator for at least 4 hours to overnight before serving. Top with your favorite fruits, nuts and seeds.
