Ingredients

For the Walnuts

  • 2 cups halved walnuts
  • 3 tablespoon pure maple syrup
  • ¼ teaspoon salt

For the Brie

  • 10 ounce wheel of Brie see notes
  • ¼ cup honey
  • 1 sprig fresh rosemary
  • Fresh bread toasted, for serving
  • Crackers for serving
  • Grapes for serving

Instructions

For the Walnuts

  • Preheat a large, dry skillet over medium heat. Add the walnuts, maple syrup, and salt to the skillet and stir. Reduce heat to medium-low and continue to cook, stirring constantly, until syrup is caramelized and walnuts are golden (approximately 2-3 minutes). Keep an eye on them as you do not want them to burn!
  • Remove nuts from the skillet and spread out on a piece of parchment paper to prevent clumping.

For the Brie

  • Preheat oven to 350 degrees F.
  • Unwrap brie and transfer to a small, shallow ovenproof dish or place in the center of a baking sheet lined with parchment paper. Drizzle the top with honey and add a spring of rosemary to the top.
  • Bake in the oven for 10-15 minutes, or until the honey is bubbling and cheese round is soft to the touch.
  • Remove from the oven and very carefully transfer to a shallow bowl or serving plate/board (see notes). Drizzle with additional honey, if desired, and serve with candied walnuts, crusty bread, crackers, and fresh fruit. Best served immediately.

Notes

Brie: try to purchase an 8-12 oz wheel of brie. The ideal brie for baking is a younger cheese and one labeled "double cream". Older, "triple cream" cheese may turn out a little too runny - still delicious, but more difficult to eat and harder to keep contained. If there's any confusion, just ask your local cheese person.
Transfer: After your brie has been baked it will be very delicate. I recommend transferring your baked brie on the parchment paper it was baked on (plus it makes for easier clean-up).
Over-baking: Yes, brie can be overbaked which ultimately results in a hard middle. If, after 15 minutes, you can't tell if your brie is ready, try inserting a skewer or sharp knife into the middle. If it comes out with melted cheese stuck to it, you know that your cheese is ready.
How long will baked brie stay gooey? Your baked brie will stay gooey for approximately 10-15 minutes. If it starts to harden, simply pop it in the microwave at 15- second intervals.
