Tomato Mozzarella Sandwich Recipe with Herb Mayo
Made with fresh whole milk mozzarella, homemade herb mayonnaise, creamy avocado, and spicy red onion, this Tomato Mozzarella Sandwich with Herb Mayo is a fast and fresh alternative to an otherwise boring sandwich. Prepare the mayo ahead of time and keep it in the refrigerator up to a week!

FOR THE HERB MAYO
- 1 cup mayonnaise full fat or low fat
- 1 clove garlic minced
- 3 anchovy fillets optional, omit for a vegetarian version
- 1 tablespoon fresh parsley chopped
- 2 teaspoon fresh chives chopped
- 2 teaspoon fresh basil chopped
- 2 teaspoon fresh oregano chopped
FOR THE SANDWICH
- 2 sliced seeded, whole grain bread or bread of choice
- 2 tablespoon prepared herb mayonnaise
- ¼ avocado sliced
- 100 grams fresh whole milk mozzarella cheese (two thick slices)
- thinly sliced red onion
- 1 medium heirloom tomato sliced
- ½ cup alfalfa sprouts
- 3 leaves butter lettuce
FOR THE SANDWICH
Lightly toast the bread and spread each slice with one tablespoon of mayonnaise. Top one slice of bread with the avocado, sliced mozzarella, sliced red onion, alfalfa, and butter lettuce. Place the other slice of toasted bread on top. Wrap the sandwich in a piece of parchment paper and slice in half with a sharp knife.
